1 tbsp butter for the skillet
2 cups almond flour
1/2 cup flax seed meal
2 tsp baking powder
1/2 tsp salt
1 & 1/2 cups shredded Cheddar cheese divided
3 large eggs lightly beaen
1/2 cup butter melted
3/4 cup almond milk
Preheat oven to 425F. Add 1 tbsp butter to a 10-inch oven-proof skillet and place in oven.
In a large bowl, whisk together almond flour, flax seed meal, baking powder, salt and 1 cup of the shredded cheddar cheese.
Stir in the eggs, melted butter and almond milk until thoroughly combined.
Remove hot skillet from oven (remember to put on your oven mitts), and swirl butter to coat sides.
Pour batter into pan and smooth the top. Sprinkle with remaining 1/2 cup cheddar.
Bake 16 to 20 minutes, or until browned around the edges and set through the middle. Cheese on top should be nicely browned.
Remove and let cool 15 minutes.
It’s officially freezing for me in the mornings. Yes, it’s only been in the 40’s, and I’m not going to get any sympathy from those dealing with snow, but I live in Phoenix so anything under 70 & I get to pull out my Uggs. .
I’m so thankful that, while I may be freezing, I’m happy my ketones are keeping me burning fat.

Cranberry Bliss Bars (Starbucks Copycat)
I am extremely happy with how these turned out! I'm going to make another batch of these for Thanksgiving as these are already gone!! If you're missing Starbucks Cranberry Bliss Bars as I was...this will totally hit the spot without all the sugar & carbs!
Makes 16 servings
1 3/4 cups Almond flour
3/4 c. @sukrinusa Gold
1/2 c. Erythritol, granular
1/2 c. Butter, softened
2 eggs at room temp
1 tsp. Baking powder
1/2 tsp. Salt
3/4c.-1cup Sugarfree white chocolate, chopped into chip size pieces.
1/4 c. No sugar added dried cranberries, chopped
1/2 tsp. Ground ginger
1 tsp. Orange Extract
1 tsp. Vanilla Extract .
Directions for the batter: Preheat oven to 350 degrees.
Line a 9x13 baking dish with parchment paper. Cream together sugar substitutes with butter. Add eggs,& extracts on high until fluffy.
In a large bowl mix together almond flour, salt, baking powder, ginger, till combined. Add wet ingredients to dry ingredients. Mix to combine. Add in white chocolate & cranberries.
Spread evenly in pan & bake for 30-35 minutes, or until done. Let cool completely, then cover in Saran Wrap, and chill in frig for at least an hour.
Frost with frosting below, sprinkle with 2 TBS. cranberries, and using forks drizzle white chocolate over bars. Sprinkle with orange peel. Cut into squares, and then into triangles.
8oz. Cream cheese, softened
1/4c. Butter, softened
1c. Powdered Erythritol
1/2 tsp. Orange Extract
1/2 tsp. Vanilla Extract
20 drops Cranberry flavoring from @oooflavors , (optional)
1/4 tsp. Finely grated orange peel
2 TB. No sugar added dried cranberries, chopped
2 TB. Sugarfree white chocolate, melted.
Cream butter & cream cheese together. Add powdered Erythritol and beat until combined. (It will be a lil crumbly). Add extracts & cranberry flavoring, mix on high till smooth. Spread over bars.

My mom is making a yummy but non-Keto dinner tonight, so on my way home from visiting friends, I picked up the Aussie Cob Salad with 5oz Sirloin and a side of Cheesy Broccoli from @outback. The salad came with egg, bacon, and cheese (I asked for no tomato or croutons). Grilled Chicken breast was the add-on option, but I’m not a chicken breast girl (and steak is my FAVE), so I asked for sirloin instead. 🥗🥩🧀🥦
Ended the night with a bowl of Better Than Noodles! They are 30 calories for the whole package and zero carbs. I rinsed them thoroughly and then pan fried them with butter, cream cheese, heavy cream and garlic powder. Then topped with parm. I purchased these on amazon and they are the best pasta replacement I have found. Great in stir fries or adding to soup. I'm going to try them with bolognese next. Swipe right to see the details.
