*For the base:
2 cups of maria biscuit ground in the processor;
2 tbsp sugar;
1 pinch of salt;
70 g butter without melted salt (if using salt, omit the pinch) *For the filling:
900g cream cheese at room temperature
1 1/3 cup sugar crystal (270 g)
a bit of salt
2 tsp vanilla extract
4 eggs of the big type
2/3 cup sour cream (160 ml) to make the sour cream is just measure the amount needed and mix a teaspoon of lemon squeezed and wait 30 minutes to thicken. *For the coverage:
4 tbsp of strawberry jam;
1 cup of crystal sugar;
1/2 cup of water or a little more until the syrup point;
Start at the base. Preheat the oven to 175ºC. In a large bowl, combine the ground biscuit, salt and sugar. Add the melted butter and mix well, until you get a moist mixture.
As the cheesecake will be baked in a water bath and the shape should have the bottom or the bottom and the sides removable, it is important to prepare it to avoid getting water and soaking the base. Wrap the bottom of the form and sides with aluminum foil. Repeat with another sheet.
Line the bottom of the shape with this biscuit flour, filling the whole surface and pressing with a glass to agglutinate it well.
Bake for 8-10 minutes. Remove from the oven, lower to 160ºc, and let the base cool while preparing the filling;
Place the cream cheese in the bowl of the mixer and beat on medium speed for 4 minutes or until soft and creamy. Add the sugar and beat for another 4 minutes;
Add the salt and vanilla, beating with each addition. Add the eggs, one by one, beating for 1 minute in each addition. Add the sour cream, beat.
Place the shape of the cheesecake on a high-edged baking dish. Pour the filling onto the base. Top up half the baking dish with boiling water to make the water bath and place on the oven. Bake for 1h30. Turn off the oven and allow the cheesecake to cool in there for about another hour. This process will prevent cracking. Refrigerate for 8h.
Coverage: Add the jam, water, and sugar in a pan over medium heat until the sugar dissolves and thickens.
Cover the cheesecake and return the refrigerator to cool. Decorate as you like
