I make this every week bc it’s good and I try to find the easiest ways to cook the things I love buying at the farmers’ market. I’m talking about sliced wild mushrooms, friends. I buy them sliced bc a) they’re cheaper and b) I don’t feel like slicing them.
1. Melt butter or oil in a pan - I like #dancysfancybutter - has mixed herbs in it. Sold @easternmarket
2. Add mushrooms, toss to coat. Let them cook and caramelize a little without disturbing, flip and brown the other side
3. Add 3 eggs and beat a little with a fork
4. Cook on medium, covered. Flip if top is still raw.
