I snuck some pumpkin purée into my Goan curry simmer sauce along with chickpeas, onions, cucumbers, coconut cream, parsley and just a splash of cognac for a light lunch. 💡 This is a basic red curry paste local to Goa, India. Positioned on a warm coastline, ingredients typically include the meaty portion of the coconut, tamarind, ginger, and other spices. Traditionally, this is used in many fish dishes like prawn curry but can be easily adjusted to fit a vegan diet.
As a foodie, hell I even went to culinary school, I hate when people post things that they didn’t make themselves. I hate it, I hate it. How dare you post store bought food for likes. That being said... to push the vegan movement forward... I guess I can look past it. If it means spreading awareness... and giving recognition to stores that offer kind options. So here it is ladies and gentlemen.... a falafel bowl from @rotimodernmed that I slammed in between appointments. I did not make any portion of it, my apologizes.
Homemade vegan egg rolls made heathy by baking them instead of frying- the baked ones actually take water instead of oil! Of course I made a veggie full stir fry and even I subbed in hearts of palm for a firm tofu feel, rolled them up, baked them and garnished them with micro greens. I dipped them in everything sriracha, soy sauce, mustard, and even extra peanut sauce I had in the fridge 🌱
Scary movie night with the roomie 💀 🍿 🎃 Instead of a tub of popcorn I went with a tub of G R E E NS. I charred 3 heads of broccoli in the oven then tossed it with puréed artichokes, vegan pesto, balsamic glaze, fresh thyme, almond milk ricotta, fresh basil, micro greens, cracked pepper, and crushed flaxseed crackers on top for some crunch. I paired it with an old vine Argentinian Malbec and stayed full the whole movie 🌱
Hello fall! First order of business... start my weekly roasts! I always make homemade croutons and roast a pan of pumpkin, squash, sweet potato, etc. I make sure to keep both of these on hand to top dishes from salads to soups to pasta or to be eaten alone. It’s a fall/winter routine you need to start ASAP 🌱
🚨 VEGAN RESTAURANT ALERT 🚨 sEiTaN & cAsHeW vEgAn NaChOs: Honestly could not tell these were meat or dairy free and got worried I was breaking my green streak but here almost all menu items can be made vegan if they are not already. It’s always cool to find a vegan restaurant but it’s electrifying to find a vegan bar! My new favorite place in town @handlebarchicago 🍻🌱
